Fistulina hepatica - beefsteak fungus - is a remarkable bracket species that looks and bleeds like raw meat, with a tart, citrus-edged flavor unlike any other mushroom. It grows on oak and chestnut, often low on the trunk or from the root base, and is far less commonly cultivated than the hardwood gourmets - a rarity in any culture library.
