Hericium erinaceus - lion's mane - is a tooth fungus prized for its cascading white spines and a texture that cooks down like crab or lobster. In the wild it fruits from wounds and scars on living and dead hardwoods, most often beech and oak.
HE-1223 was isolated from a wild fruiting on white oak in Upshur County, West Virginia. In cultivation this line runs bruise-resistant with a large, dense first flush and a smaller second flush. An excellent culinary strain - clean form, good shelf presence, forgiving to work with.
Available as a 10cc liquid culture or 90x15mm agar plate. Every Redbird line traces to the tree and county it came from.
